Another lazy shortcut receipe. Singapore Style Cheesecake without baking required.
I was dardar assistant for the whole day and simply loves this easy receipe. Only took an hour to complete and no fuss. Besides tin we also made tiramisu into small container so that we would not gain weight :D
Ingredients:
1) 4 eggs
2) 500g Mascarpone cheese (Can use Philadelphia but I think Mascarpone better)
3) 125g caster sugar or around 1/2 caster sugar
4) 300g Marie Biscuits
5) 1 cup strong Kopi O Kosong / plain black coffee
6) 4cl of smooth cognac ( I use Gordon Bleu)
7) Little Milo powder / Cocoa powder
Steps:1) Separate eggs into egg white and yolk. Whisk Egg yolk first
2) Add in Mascarpone cheese into mixture and blend well
3) Whisk egg white until stiff peaks form. Add in sugar gradually and blend till obtain a rich creamy texture
4) Add the above mixture (sugar + egg white) to the Mascarpone cheese blend
5) Prepare Kopi O Kosong / plain black coffee
6) Very quickly dip biscuits into coffee and line into base of cake tin with these biscuit, top it off with cheese mixture
7) Add another layer of dipped biscuits on top of cheese mixture and top it off with another layer of cheese for 2 to 3 layers.
8) Finish with a layer of cheese and disperse milo powder / cocoa powder over the last layer
9) Refrigerate for at least 6 hours but preferably overnight

The reason why I am putting in all the receipe is that I am trying to clear up my rooms .. too many paper sitting everywhere..
So here's the 1st one I made for my sis Bday in Jan this year..Sorry I really too lazy to update :)

2) 125g butter, melted
3) 100g packet marshmallows ( Just don't trouble urself..use a single pack )
4) 1 teaspoon gelatine
5) 1/4 cup milk
6) 1/4 teaspoon strawsberry essence ( I use apple green essence)
7) 2/3 cup thickened cream
8) 250g punnet strawsberry, halved ( I think as u liked)
9) 2 x 100g packets strawsberry jelly
10) 2 cups boiling water
Steps:
1) Grease a 19cm x 19cm pan ( I use a round pan as shown in photo)
2) Combine biscuits and butter in a bowl. Press evenly over base of prepared pan. Refrigerate until firm
3) Combine marshmallows, gelatine and milk in a saucepan. Stir over low heat without boiling until marshmallows are melted. Meanwhile add in essence too
4) Transfer to large bowl and cool to room temperature
5) Whip cream until soft peaks form, fold into marshmallow mixture, then pour over base
6) Place strawsberries over marshmallow and refrigerate mixture for around 3omins
7) Dissolve jelly in boiling water and cool to room temperature
8) Pour jelly over strawsberries + marshmallow pan.
9) Refrigerate until firm .. then decorate :D

Enjoy making delicious cake without baking :)
